Artifact Spotlight: Maple Sap Evaporator Model, ca. 1880-1930
Photo: Tom Alföldi

Every spring provides an opportunity to go to a sugar shack and enjoy a sweet treat, a tradition inherited from First Nations. From kettles to evaporators with flue pans, maple sap evaporation technology has changed a great deal since the 1880s.

Before the age of 3-D images, sales representatives would use miniature models to show their bulky, heavy-to-haul products, so that potential customers could visualize the equipment more readily.
